Coconut Lime Cupcakes v2

Yield: 20 cupcakes

Ingredients

  • Cupcakes
    • 1 box (15.25 oz) white cake mix
      • Plus ingredients to make
    • 3/4 cup coconut milk
    • 1/4 cup lime juice
    • Zest of one lime
    • 1 tbsp lime flavoring
    • Green food coloring (optional)
  • Frosting
    • 1 1/2 cups heavy whipping cream
      • If desired, you can refrigerate leftover coconut milk from the cupcakes, skim off the cream, and use that as a partial replacement for the whipping cream
    • 1 package (8 oz.) cream cheese, softened
    • 1 cup powdered sugar
    • 1/8 tsp salt
    • 1 tsp coconut flavoring
  • 2 limes, sliced

Directions

  1. For the cupcakes, pour the cake mix into a mixing bowl.  Substitute the coconut milk and lime juice for the water.  Mix in the lime zest, lime flavoring, food coloring, and other ingredients from the package instructions (oil egg).  The batter will be thick.
  2. Bake cupcakes according to cake package instructions.  Cool completely.
  3. For the frosting, whip the cream until stiff peaks.  Set aside.
  4. In a separate bowl, cream together the cream cheese, powdered sugar, salt, and coconut flavoring until smooth and fluffy.
  5. Fold the whipped cream into the cream cheese frosting.
  6. Pipe the frosting on top of the cupcakes.
  7. Immediately before serving, place a lime slice into the frosting.
