Baked Beef Burritos

Mexican food is great because it's really impossible to mess up.  Pretty much all Mexican food is good, and this is really good.  So if you want an easy recipe to try then this is for you.

Yield: 6 burritos

Ingredients

  • Beef
    • 3/4 lb ground beef
    • 1/2 yellow onion, chopped
    • 3 cloves garlic, minced
    • 1/2 tsp caribbean jerk seasoning
    • 1/4 tsp cayenne pepper
    • 1/4 tsp crushed red pepper
    • 1/4 tsp chili powder
    • 1 tsp cajun seasoning
    • 1/4 tsp seasoned salt
  • 2/3 cup rice, cooked
  • 1 cup black beans
  • 6 large tortillas
  • 1/2 cup salsa
  • 1/2 lb. cheddar cheese, grated, divided
  • 1 cup picante sauce
  • Sour cream
  • Green onions, chopped

Directions

  1. In a large skillet, brown the beef and onion.  Drain excess fat and add the spices.
  2. While the beef is cooking, cook the rice and heat the beans in a small saucepan.
  3. In each tortilla, put some rice, beans, beef, salsa, and cheese.  Roll up and placed in a greased 9" x 13" casserole dish.  Drizzle with picante sauce and sprinkle with remaining cheese.  Bake at 350°F for 10-12 minutes.
  4. Serve hot with sour cream and green onions.
