Grilled Honey Sriracha Chicken Pizza

Yield: 4 servings

Ingredients

  • 6 tbsp honey
  • 3 tbsp apricot jam
  • 1 1/2 tbsp soy sauce
  • 1 tbsp lime juice
  • 6 tbsp Sriracha
  • 1 1/2 cups cooked & shredded chicken
  • Pizza dough for a 15" pizza
  • 8-10 string cheese
  • 1/2 cup tomato sauce
  • 1 lb. shredded mozzarella cheese, divided
  • 4 green onions, chopped

Directions

  1. In a saucepan, combine the honey, apricot jam, soy sauce, lime juice, and Sriracha.  Bring to a boil, and then reduce heat and simmer for ten minutes, until thickened.  Remove from the heat and stir in the chicken.
  2. Roll the dough on a floured surface.  Transfer to a sheet of parchment paper.
  3. Place the string cheese in a circle around the outside edge, and fold the dough over to make a cheese stuffed crust.  Pinch the dough closed.
  4. Spread tomato sauce over the dough.  Add 3/4 of the mozzarella cheese, followed by the chicken with all the Sriracha glaze.  Top with the remaining cheese and green onions.
  5. Bake at 475°F for 6-10 minutes.  Broil for and additional 1-4 minutes if needed.
  6. Slice and serve hot.
