Ingredients
- 6 tbsp honey
- 3 tbsp apricot jam
- 1 1/2 tbsp soy sauce
- 1 tbsp lime juice
- 6 tbsp Sriracha
- 1 1/2 cups cooked & shredded chicken
- Pizza dough for a 15" pizza
- 8-10 string cheese
- 1/2 cup tomato sauce
- 1 lb. shredded mozzarella cheese, divided
- 4 green onions, chopped
Directions
- In a saucepan, combine the honey, apricot jam, soy sauce, lime juice, and Sriracha. Bring to a boil, and then reduce heat and simmer for ten minutes, until thickened. Remove from the heat and stir in the chicken.
- Roll the dough on a floured surface. Transfer to a sheet of parchment paper.
- Place the string cheese in a circle around the outside edge, and fold the dough over to make a cheese stuffed crust. Pinch the dough closed.
- Spread tomato sauce over the dough. Add 3/4 of the mozzarella cheese, followed by the chicken with all the Sriracha glaze. Top with the remaining cheese and green onions.
- Bake at 475°F for 6-10 minutes. Broil for and additional 1-4 minutes if needed.
- Slice and serve hot.
