Yield: 32 oz. nuts
Ingredients
- 3 egg whites
- 2 tbsp vanilla
- 3 cups brown sugar
- 1 tbsp cinnamon
- 2 1/4 tsp salt
- 1 1/2 tsp nutmeg
- 3/4 tsp ginger
- 3 lbs. raw mixed nuts
- I used walnuts, cashews, almonds, hazelnuts, and pecans
Directions
- Whisk the eggs until frothy (not stiff peaks). Mix in the vanilla.
- In a separate bowl, mix together the brown sugar, cinnamon, salt, nutmeg, and ginger.
- Mix the nuts into the egg whites until evenly coated. Pour in the seasoning and stir together.
- Smoke the nuts for 1 hour at 225°F.
- I used a few disposable aluminum foil pans with holes poked in the bottom so that smoke can rise through them.
- If the nuts are still sticky, transfer to a baking sheet and bake for another hour.
- Remove from the smoker and let cool.
