Blackberry Ricotta Basil Pizza

Yield: 4 servings

Ingredients

  • Dough for a 12" pizza
  • 1 tbsp olive oil
  • 6 oz. blackberries, smashed with a fork
  • 2 oz. shredded Parmesan
  • 8 oz. shredded Swiss cheese
  • 3/4 cup ricotta cheese
  • 6 oz. whole blackberries
  • 1/4 cup chopped green onions
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 tbsp chopped basil

Directions

  1. Roll out the pizza dough on a floured surface.  Transfer to a sheet of parchment paper.
  2. Drizzle the olive oil onto the dough, and brush over the entire surface to the edges.
  3. Ladle the pulp of the blackberries onto the crust and spread like a pizza sauce.  Top with the Parmesan and Swiss cheese.  Dollop the ricotta over the pizza, and then top with whole blackberries and chopped green onions.  Sprinkle with salt & pepper.
  4. Bake at 475°F for 8-11 minutes.  Broil for an additional 1-4 minutes if needed.
  5. Sprinkle with chopped basil and serve hot.
