Cookie Dough Sandwich Cookies

Yield: 48 sandwich cookies

Ingredients

  • These chocolate chip cookies, cooled completely.
  • 25 tbsp butter, softened
  • 1 2/3 cup sugar
  • 1 2/3 cup brown sugar
  • 5 tsp vanilla
  • 2 1/2 cups almond flour
  • 5/8 tsp salt
  • 10 tsp heavy whipping cream
  • 3 1/3 cups mini chocolate chips

Directions

  1. Bake the cookies, and cool completely.
  2. In a stand mixer, cream together the butter, sugar, brown sugar, and vanilla.  Mix in the almond flour and salt, followed by the mixing cream.  Finally, mix in the mini chocolate chips.
  3. The filling should be soft.  Use a knife to spread it onto the bottom of one cookie, and then sandwich another cookie on top.
  4. Repeat until all cookies are filled.
  5. Serve at room temperature.
