Yield: 48 sandwich cookies
Ingredients
- These chocolate chip cookies, cooled completely.
- 25 tbsp butter, softened
- 1 2/3 cup sugar
- 1 2/3 cup brown sugar
- 5 tsp vanilla
- 2 1/2 cups almond flour
- 5/8 tsp salt
- 10 tsp heavy whipping cream
- 3 1/3 cups mini chocolate chips
Directions
- Bake the cookies, and cool completely.
- In a stand mixer, cream together the butter, sugar, brown sugar, and vanilla. Mix in the almond flour and salt, followed by the mixing cream. Finally, mix in the mini chocolate chips.
- The filling should be soft. Use a knife to spread it onto the bottom of one cookie, and then sandwich another cookie on top.
- Repeat until all cookies are filled.
- Serve at room temperature.
