Halloween Hand Cheeseball

Yield: 18 servings


Ingredients

  • 3 packages (8 oz. each) cream cheese, softened
  • 1/3 cup petite diced roasted red pepper
    • Buy them in a jar and dice them up.  Roasting peppers yourself is too much work.
  • 1 tsp parsley
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper
  • 9 oz. prosciutto
  • Sriracha
  • Crackers

Directions

  1. In a mixing bowl, mix together the cream cheese, red pepper, and spices.  When thoroughly mixed, cover with plastic wrap and store in the fridge for 30 minutes.
  2. On a sheet of parchment paper, trace your hand.  Flip the paper over and place onto a baking sheet so the ink is underneath.  Repeat with the other hand.
    • I had enough cheese to do two hands.  If you've got big hands, then maybe you'll only make one.  Your mileage may vary.
  3. Remove the chilled cheese from the fridge.  Place a tiny dab under each corner of the parchment paper to hold it in place.  Then, use a spoon to fill in the fingers & hands of both tracings.  It doesn't have to be perfect because it'll be covered with prosciutto.
  4. Cover with plastic wrap and freeze for ~45 minutes.
  5. Remove from the freezer.  Use a sharp knife to cut the fingers and thumb off.  Cover and return to the freeze for 15 more minutes.
  6. Remove from the freezer.  Lift each digit from the paper and cover with prosciutto, being sure to drape some underneath.  Leave some overhang where the digit attaches to the hand.
  7. Do the same with the palm & wrist, draping with prosciutto, tucking underneath, and leaving some overhang where it meets the digits.  Refreeze for 15 minutes while you repeat with the second hand.
  8. To reassemble, transfer the palm onto your cutting board.  Lift up the extra prosciutto and slide each finger into place.  With the remaining prosciutto, cut a few long strips and lay along the back of the hand to simulate tendors.
  9. Repeat for the other hand.  Cover and refrigerate.  Remove from the fridge about 30 minutes before serving.
  10. Immediately before serving, squeeze a little Sriracha onto the back of one hand and stab with your serving knife.  Serve with crackers.
