Thai Basil Chicken

Yield: 4 servings

Ingredients

  • Stir Fry
    • Coconut oil, for frying
    • 1 cup thinly sliced shallots
    • 10 cloves garlic
    • 2 jalapenos, petite diced
    • 2 poblanos, petite diced
    • 16 oz. ground chicken
      • We used ground turkey.  Either one will work.
    • Red bell pepper, petite diced
    • 1 cup Thai basil.
  • Sauce
    • 1/4 cup soy sauce
    • 2 tbsp maple syrup
    • 2 tsp Sriracha sauce
    • 2 tbsp oyster sauce
    • 2 tbsp fish sauce
  • Cooked rice
  • Garnish
    • Sliced green onions
    • Thai basil leaves
    • Sesame seeds
    • 4 fried eggs

Directions

  1. Heat a skillet with some coconut oil for frying.  Add the shallots and fry until softened.
  2. Add the garlic & peppers.  Fry for 30 seconds.
  3. Add the meat and red bell pepper.  Fry until the meat is cooked through.
  4. While the meat is cooking, mix the sauce ingredients in a mixing bowl.
  5. Add the Thai basil and sauce to the meat.  After one minute, turn off the heat and continue stirring until the basil begins to wilt.
  6. Serve hot over rice.  Garnish with sliced green onions, more basil, sesame seeds, and a fried egg.
