Jalapeno Sausage Quiche

Yield: 2 quiches, 4 servings each


  • Pastry for two crusts
  • 1 lb. pork sausage
  • 5 eggs
  • 1/2 cup milk
  • 1/3 cup mayonnaise
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups shredded cheddar cheese
  • 3 jalapenos, diced
  • 5 green onions, chopped


  1. Prepared the pastry dough and line two pie plates.  Line with aluminum foil and bake at 400°F for 10 minutes.  Remove the foil and bake for 5 more minutes.
  2. Cook the pork in a large skillet until it's no longer pink.  Drain the fat.
  3. In a mixing bowl, combine the eggs, milk, mayonnaise, salt, and pepper.  Add the cheese, jalapenos, green onions, and pork.  Mix well and then pour into the two prepared crusts.
  4. Bake at 400°F for 30-35 minutes.  If needed to prevent overbrowning, cover the edges with aluminum foil for the last 15 minutes.
  5. Cool for 10 minutes before serving.
