Mexican Pulled Pork

Yield: 12 servings, 3 tacos each


  • 3 lbs. boneless pulled pork, cut into 2" chunks
  • 1/3 cup taco seasoning
  • 1 cup orange juice
  • 1/2 cup chicken stock
  • 1/4 cup lime juice
  • 3/4 tsp liquid smoke
  • Taco fixin's
    • Corn soft taco shells
    • Shredded lettuce
    • Chopped tomatoes
    • Black beans
    • Sour cream
    • Shredded cheese
    • Chopped fresh cilantro
    • Salsa


The pictures show a double batch of pulled pork.
  1. Toss the pork with taco seasoning.  Place into Instant Pot pressure cooker.
  2. Mix together orange juice, chicken stock, lime juice, and liquid smoke.  Pour into the instant pot.
  3. Pressure cook on "Meat" mode for 30 minutes.
  4. When done, turn the Instant Pot off and let stand for ten minutes.  After ten minutes, manually release remaining pressure.
  5. Using two forks, shred the pork.  It should be really easy because it'll be so tender.
  6. Serve with your favorite taco fixin's, such as those listed above.
