Strawberry Kiwi Tart

I recommend enjoying this fruit tart on a warm spring evening.

Yield: 6 servings


  • Crust
    • 2 cups flour
    • 1 tsp salt
    • 1/2 cup oil
    • 6 tbsp milk
  • Filling
    • 1 lb strawberries
    • 5 kiwis
    • 1/2 cup sugar
    • 2 tbsp tapioca
  • Glaze
    • 6 tbsp confectioners' sugar
    • 1/2 tsp almond extract
    • 2 tsp water


  1. In a large mixing bowl, combine the flour and salt.  And oil and milk, tossing with a fork until a dough forms.  Refrigerate for an hour.
  2. Slice the strawberries and kiwi.  Combine in a bwol with the sugar and tapioca.
  3. Roll the dough out into an 11-inch circle.  Spoon the fruit mixture into the center and then fold the edges back, not quite covering the center.
  4. Bat at 400°F for 25-30 minutes.  Cool on a wire rack.
  5. For the glaze, combine the confectioners' sugar, almond extract, and water in a small bowl.  Drizzle over the tart.
