Peanut Butter Brownies

These are a flavorful twist on traditional brownies, adding in a thick layer of peanut butter and making the chocolate a ganache over the top.  It's ok to fill up on dessert .  Sharing is optional.

Yield: 48 brownies (depending on how you cut them)

Ingredients

  • Brownies
    • 1/2 lb. butter, softened
    • 1 3/4 cups sugar
    • 1 cup creamy peanut butter
    • 2 eggs
    • 1 egg yolk
    • 2 tsp vanilla
    • 2 cups flour
    • 1/4 tsp salt
    • 1 1/2 cups semi-sweet chocolate chips
  • Ganache
    • 1/2 cup cream
    • 1 1/2 cups semi-sweet chocolate chips
    • 1 tbsp butter, softened

Directions

  1. For brownies, cream together the butter and sugar.  Add the peanut butter and mix well.
  2. Add the eggs, egg yolk, and vanilla and blend well.  Mix in the flour and salt just until combined.  Mix in the chocolate chips.
  3. Grease a 9x13 baking pan.  Line the bottom with parchment paper and grease the paper.
  4. Spread the batter  in the baking pan.  Bake at 350°F for 35-45 minutes.  Cool completely on a wire rack.
  5. For ganache, heat the cream in a small saucepan until it's boiling.  Place the chocolate chips in a bown and pour the cream over top.
  6. Wait 1 minute while the chocolate heats up.  Add the butter and whisk vigorously until smooth.  Spread over the brownies.
  7. Cut into squares.  I did eight rows, six per row.
