Sausage Quiche

Yield: 8 servings

Ingredients

  • 1 lb. sausage
  • 1/2 onion, chopped
  • 6 eggs
  • 1 1/2 cup milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cracked red pepper
  • 1 9" pie crust
  • 1 cup shredded cheddar cheese, divided

Directions

  1. Cook the sausage and onion in a skillet.  Drain the fat.
  2. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and cracked red pepper.
  3. Place the cooked sausage & onion mixture into the pie crust.  Cover with half the cheese, and then pour the eggs over the top.  Top with remaining cheese.
  4. Bake at 375°F for 20-25 minutes.
  5. Let the quiche rest for 10 minutes, and then serve warm.
