Ingredients
- 1 cup dry yellow lentils
- 1 onion, finely chopped
- 1 tsp cumin
- 4 cups water
- Salt, to taste
- Pepper, to taste
- 1 cup cilantro leaves
- 1/4 cup olive oil
- 2 tbsp lime juice
- Green food coloring, if desired
- Pita chips
Directions
- Mix the onion, lentils, cumin, water, salt, and pepper in a saucepan. Bring to a boil, reduce heat, and simmer for 25-30 minutes until the lentils are tender and falling apart. Remove from the heat and cool.
- In a food processor, blend the lentil mixture, cilantro, olive oil, and lime juice until smooth. Add green food coloring to reach desired color.
- Serve in a bowl with pita chips for dipping.
