Lentil Cilantro Dip

Yield: 8 servings

Ingredients

  • 1 cup dry yellow lentils
  • 1 onion, finely chopped
  • 1 tsp cumin
  • 4 cups water
  • Salt, to taste
  • Pepper, to taste
  • 1 cup cilantro leaves
  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • Green food coloring, if desired
  • Pita chips

Directions

  1. Mix the onion, lentils, cumin, water, salt, and pepper in a saucepan.  Bring to a boil, reduce heat, and simmer for 25-30 minutes until the lentils are tender and falling apart.  Remove from the heat and cool.
  2. In a food processor, blend the lentil mixture, cilantro, olive oil, and lime juice until smooth.  Add green food coloring to reach desired color.
  3. Serve in a bowl with pita chips for dipping.
