Blueberry, Corn, & Feta Salad

Yield: 10 servings

Ingredients

  • 6 cups (28 oz.) frozen corn
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp minced green onions
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 2 cups (1 pint) blueberries
  • 5 oz. crumbled feta cheese
  • Additional green onions for garnish.

Directions

  1. Cook the corn according to package directions.  Drain the water and place in a mixing bowl.
  2. Add the remaining ingredients.  Toss to coat.
  3. Serve with additional green onions as garnish on top.
