Sloppy Joes

Yield: 12 servings

Ingredients

  • 3 lbs. ground beef
  • 3/4 tsp baking soda
  • Olive oil
  • 2 large poblano peppers, petite diced
  • 2 large white onions, petite diced
  • Pinch of salt
  • Spices
    • 3 tsp salt
    • 4 1/2 tsp onion powder
    • 3 tsp garlic powder
    • 3 tsp black pepper
    • 5 1/4 tsp paprika
    • 1/4 tsp crushed red pepper
  • 5 tbsp flour
  • 9 tbsp tomato paste
  • 9 tbsp ketchup
  • 6 tbsp dijon mustard
  • 7 1/2 tsp brown sugar
  • 1/2 cup + 1 tbsp worcestershire suace
  • 4 1/2 tbsp red wine vinegar
  • 4 1/2 tsp beef bullion
  • 2 1/2 cups beef stock
  • 2 drops liquid smoke
  • Buns

Directions

  1. Mix together the beef and baking soda.  Set aside.
  2. Warm some oil in a large pot and add the poblano peppers, onions, and a pinch of salt.  Saute until they start to take on some color.
  3. Add in the beef and cook until browned and broken down into small pieces.  Add the seasonings and cook for another 30 seconds.
  4. Add in the flour and stir together.  Add all remaining ingredients and bring to a simmer.  Reduce heat and simmer until reduced.
  5. Serve on toasted buns.
