Fried Mac & Cheese Bites

Yield: ~80 bites

Ingredients

  • 2 packages mac & cheese, plus ingredients to prepare
  • 3/4 cup grated parmesan
  • 2/3 cup flour
  • 1 tsp black pepper
  • 6 eggs
  • 1 tbsp salt
  • 3/4 cup water
  • 4 cups panko breadcrumbs
  • Oil for frying.

Directions

  1. Prepare the mac & cheese according to package directions.  Mix in the grated parmesan.
  2. Spread the mac & cheese into a 9" x 9" baking pan.  Let cook completely, then cover and refrigerate until fully cooled.
    • Using a silicone baking pan will make the removal much easier.
  3. In a small bowl, combine the flour and black pepper.
  4. Remove the mac & cheese from the pan and cut into 1" squares.  Roll the cubes in the flour mixture, then place in an airtight container.  Cover and refrigerate until ready to cook.
  5. To make the egg wash, whisk together the eggs, salt, and water.
  6. Pour the panko breadcrumbs into a bowl.
  7. Heat the oil in a cast iron skillet to 350°F.
  8. Take the floured bites and dip in:
    • Egg wash
    • Panko breadcrumbs
    • Egg wash
    • Panko breadcrumbs
  9. I prefer to do in batches of 8-12 at a time.  Place them into the oil to begin frying.  Using tongs, flip over when the bottom side is browned.
  10. When done frying, transfer to a baking sheet in a warm oven to keep warm while you continue frying more.
  11. When done, serve warm.
