Loukoumades

Yield: About 40

Ingredients

  • 1/2 cup warm water
  • 2 1/4 tsp yeast
  • 2 1/4 cups flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/2 cup warm milk
  • Syrup
    • 1/4 cup water
    • 1/4 cup honey
    • 1/4 cup sugar
    • 2 tsp cinnamon
  • 4 cups oil (for frying)

Directions

  1. Put the warm water into a mixing bowl.  Mix in the yeast and let stand 5 minutes.
  2. Add the flour, sugar, salt, and warm milk.  Beat on high until well mixed.
    • You may need to add a bit of extra flour.  It should be gooey, but not a complete liquid.
  3. Leave covered in a warm place to rise for one hour.
  4. Combine all the syrup ingredients in a small saucepan.  Bring to a gentle boil, and simmer for 2 minutes.  Remove from heat.
  5. Heat the oil for frying in a skillet.
  6. The dough will be really sticky.  Pull pieces of dough and toss into oil to cook until golden brown, flipping once with tongs.  Transfer to a wire rack.
    • If you wet your fingers in a bowl of cold water, that'll reduce how much it sticks.  It's good to have a side kick for this step to help with monitoring the frying oil.
    • The dough will puff up while frying, so don't throw in too much dough at once.
  7. Serve warm, drizzled with the honey syrup.
