Pecan Cobbler

Yield: 12 servings

Ingredients

  • 1/2 cup butter
  • 1 cup + 2 tbsp flour
  • 3/4 cup sugar
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup milk
  • 1 tsp vanilla
  • 1 1/2 cups chopped pecans
  • 1 cup brown sugar
  • 3/4 cup toffee bits
  • 1 1/2 cups boiling water
  • Ice cream
    • Vanilla or another mild flavor

Directions

  1. Place the butter in a 9x13 baking dish.  Place in the oven at 350°F until melted (3-5 minutes).
  2. In a mixing bowl, combine the flour, sugar, baking powder, salt, milk, and vanilla.  Pour into the buttered baking dish.
  3. In another mixing bowl, combine the pecans, brown sugar, and toffee bits.  Sprinkle over the batter.
  4. Slowly pour the boiling water over the batter (trust me).  Do not mix or stir.
  5. Bake at 350°F for 30 minutes.  Let stand for a half hour.
  6. Serve warm with ice cream.
