Poulet Boursin

Yield: 8 Servings


  • 8 chicken breasts
  • Salt & pepper
  • 1 package (5.2 oz.) Boursin cheese, softened
  • 8 oz. goat cheese, softened
  • 1 cup shredded mozzarella
  • 8 slices prosciutto


  1. Flatten each chicken breast to 1/4-inch thickness.  Pat dry, and sprinkle liberally w/ salt & pepper.
  2. Mix the Boursin and goat cheeses together.  Divide between the eight chicken breasts, placing at the end of each breast.  Sprinkle some mozzarella over the soft cheeses, and then roll-up each chicken breast.
  3. Wrap each chicken breast in a slice of prosciutto.  Place in a casserole dish, seam-side down.
  4. Bake covered at 400°F for 30-35 minutes.
  5. Serve hot.
