Lemon Poppy Seed Muffins

They're muffins.  With lemon.  And poppy seeds.  What's not to like?

Yield: 16-18 muffins


  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 3/4 cup sour cream
  • 1/4 cup lemon juice
  • 3/4 tsp lemon oil
  • 1 tsp vanilla
  • Zest of one large lemon
  • 2 cups flour
  • 1 tsp baknig powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp poppy seeds
  • Yellow sanding sugar, if desired


  1. Cream together the butter and sugar.  Mix in the eggs.  Mix in the sour cream, lemon juice, lemon oil, vanilla, and zest.
  2. Gradually mix in the flour, baking powder, baking soda, salt, and poppy seeds just until moistened.  Do not overmix.
  3. Pour into muffin tin that's either greased & floured or lined with paper liners.  Sprinkle with yellow sanding sugar.  Bake at 375°F for 11-14 minutes, until a toothpick inserted in the center comes out clean.
  4. Cool on a wire rack.
