Strawberry, Asparagus, and Bacon Salad

This ain't the normal, boring salad.  This colorful dish combines some flavors that you might not have expected to fit so well together.

Yield: 4 servings


Ingredients


  • 1/2 lb. bacon
  • Sauce
    • 1/2 cup oil
    • 6 tbsp orange marmalade
    • 1/4 cup balsamic vinegar
  • Asparagus
    • 30 fresh asparagus spears, tough end removed
    • 4 tbsp oil
    • 2 tsp salt
  • Topping
    • 1 lb fresh strawberries, sliced
    • 1 cup crumbled feta cheese
    • 1/2 tsp black pepper

Directions


  1. Cook the bacon in a skillet.  Set aside.
  2. Mix all of the sauce ingredients in a saucepan.  Cook over medium until, stirring, until the marmalade is melted and everything is mixed together.
  3. Lay the asparagus on a baking sheet.  Brush with the 3 tbsp oil and sprinkle with salt.  Bake at 425°F for 6-10 minutes.
  4. Transfer the asparagus to a serving dish.
  5. Stir the strawberries into the sauce.  Pour over the asparagus.  Top with feta cheese, pepper, and crumbled bacon.
