Chili-Lime Chicken Kabobs

    • 1 cup oil
    • 1/2 cup red wine vinegar
    • Juice & zest of 3 limes
    • 1 tbsp chili powder
    • 1 1/2 tsp paprika
    • 1 1/2 tsp onion powder
    • 5 cloves garlic, minced
    • 1 tsp cayenne pepper
    • 1 tsp salt
    • 1/2 tsp black pepper
  • 3 large chicken breasts, about 2 lbs
  • Vegetables
    • 1 large red bell pepper
    • 1 large yellow bell pepper
    • 1 large onion
    • 1 zucchini
    • 2 limes
    • 1 cantaloupe
    • 1 can pineapple slices
    • 1 lb mushrooms

Directions

  1. In a large bowl, combine all of the marinade ingredients.  Pour into a sealable bag.
  2. Cut the chicken into 2" chunks.  Add to the marinade.  Seal and refrigerate overnight.
  3. If using wooden skewers, soak them in water for an hour.
  4. Cut the peppers, zucchini, limes, cantaloupe, and pineapple into large pieces.
  5. Assemble the kabobs using all the vegetables and the chicken.
  6. Cook over medium heat on the grill for 8-12 minutes until the chicken is fully cooked.
  7. Serve hot right off the grill.
