Caprese Chicken

This chicken has a medley of flavors that will blow your mind!

Yield: 6 Servings


  • 12 bacon strips
  • 6 boneless chicken breasts
  • 2 tbsp oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp basil
  • 2 roma tomatoes, sliced
  • 12 slices mozzarella cheese


  1. Cook the bacon to tender (not crispy).
  2. Line a baking dish with parchment paper.  Place the chicken breasts in the dish and brush with oil.  Sprinkle with salt, pepper, and basil.  Top with tomatoes.
  3. Wrap each chicken breast in two slices of bacon in a criss-cross fashion.
  4. Bake at 400°F for 20-25 minutes.  Top each breast with 2 slices mozzarella and return to the oven for 1-2 minutes until melted.
  5. Serve hot.
