Bacon Avocado Corn

Gwen brings us one of the greatest side dishes ever conceived.  However good you think this will taste... triple that.

Yield: 4 servings


  • 5 slices thick-cut bacon
  • 1 lb frozen corn
  • 2 tbsp coarsely chopped fresh cilantro
  • Juice of 1 lime
  • 1 avocado, chopped
  • 1/2 cup feta cheese
  • Salt & pepper to taste


  1. Cook the bacon in a skillet.  Pat dry on a paper towl and cut into small pieces.  Reserve 1 1/2 tbsp bacon fat and discard the rest.
  2. In a medium pot, combine the corn, bacon, bacon fat, cilantro, and lime juice.  Cook over medium heat until the corn is warm.
  3. Add the avocado, feta, salt, and pepper.  Toss together and return to heat for 2-3 minutes.  Serve warm.
