Peach & Blueberry Cobbler

I wanted to mix it up a bit with this cobbler, so I tossed in some berries and extra spices.  It's easy to experiment to get the flavor you like, so get adventurous.

Ingredients


  • Filling
    • 1/2 cup sugar
    • 1/4 cup brown sugar
    • 1/4 tsp ground cloves
    • 1/4 tsp cardamom
    • 1/4 tsp cinnamon
    • 1 tbsp cornstarch
    • 6 cups peeled and sliced peaches
    • 1 1/2 tsp lime juice
    • 1 cup frozen blueberries
  • Pastry
    • 2 cups flour
    • 2 tbsp sugar
    • 3 tsp baking powder
    • 1 tsp salt
    • 6 tbsp cold butter
    • 1 cup milk
    • 2 tbsp sugar

Directions


  1. Heat oven to 400°F.
  2. In a medium pot, combine the sugar, brown sugar, cloves, cardamom, cinnamon, and cornstarch.  Add the peaches, lime juice, and blueberries.  Stir together.
  3. Cook over medium heat until they boil.  Boil for 1 minute, stirring constantly.  Remove from the heat and pour into a 3 quart casserole dish.  Place in the oven to keep warm.
  4. In a mixing bowl, combine the flour, sugar, baking powder, and salt.  Cut in the butter until crumbly.  Add the milk and mix well.
  5. Drop the batter on top of the peach & blueberry filling.  You should have enough to cover the entire top.
  6. Bake at 400°F for 30 minutes.  Remove from the oven and let cool for 30 minutes.  Serve warm.
