Skillet Chocolate Chip Cookie

Because anything worth doing is worth doing to ridiculous extremes.

Yield: 12 servings


Ingredients


  • 12 tbsp butter, softened
  • 2 2/3 cups sugar
  • 2 1/4 tsp molasses
  • 2 tbsp + 2 tsp powdered coffee creamer
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 2 1/4 cups flour
  • 1 1/2 tsp cornstarch
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 3/4 tsp salt
  • 8 oz. package semi-sweet chocolate chips, divided

Directions


  1. Cream together the butter, sugar, molasses, and coffee creamer.  Add the eggs and vanilla, mixing well.
  2. Add the flour, cornstarch, baking powder, baking soda, and salt.  Mix just until combined.  Mix in the chocolate chips, reserving a few.
  3. Grease a 12" cast-iron skillet with a stick of cold butter.  Spread the dough into the skillet and press the remaining chips on top.
  4. Bake at 325°F for 45-50 minutes.  Remove from the oven and let cool on wire rack.
  5. Serve warm.
