Chicken Piccata

The sauce on this chicken is fantastic.  In fact, I'd consider just making this sauce again for other dishes.

Yield: 3 servings


  • 1 lb chicken breast
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Flour
  • 6 tbsp butter, divided
  • 1/2 cup chicken broth
  • 1/3 cup lemon juice
  • Zest of one lemon
  • 1/4 cup capers


  1. Sprinkle the chicken  with salt and pepper.  Dredge in flour.
  2. In skillet, melt 6 tbsp butter over medium heat.  Add chick and cook until browned.
  3. Remove the chicken.  Add the broth, lemon juice, zest, and capers.  Simmer until it thickens.
  4. Add chicken and remaining butter.  Cook for another 2-3 minutes.
  5. Serve hot with sauce.
