Heavenly Surprise Cupcakes

When you bite it, you'll know where the name came from.



Ingredients


  • Filling
    • 1 package cream cheese (8 oz), softened
    • 1/3 cup sugar
    • 1 egg
    • 1/8 tsp salt
    • 1 cup flaked coconut
    • 1 cup finely chopped walnuts
    • 1 cup miniature chocolate chips
  • Batter
    • 2 cups sugar
    • 1.5 cups water
    • 3/4 cup oil
    • 2 eggs
    • 2 tsp vanilla
    • 1 tsp white vinegar
    • 3 cups flour
    • 1/2 cup baking cocoa
    • 1 tsp baking soda
    • 1 tsp salt
  • Frosting
    • 1 1/3 cups semi-sweet chocolate chips
    • 1/2 cup heavy whipping cream
    • Powedered sugar as needed (to thicken frosting)
    • Additional coconut, walnuts, and miniature chocolate chips (if desired)

Directions


  1. For filling, beat cream cheese and sugar until light and fluffy.  Add egg and salt, mixing well.  Add remaining ingredients.  Set aside.
  2. For batter, mix sugar, water, oil, eggs, vanilla, and vinegar.
  3. In separate bowl, combine flour, baking cocoa, baking soda, and salt.  Gradually beat into the oil mixture.
  4. Fill paper-lined muffin cups one-third full with batter.  Drop filling by teaspoonfuls into center of each.  Top with additional batter, filling to three-quaters full.
  5. Bake at 350ºF for 14-19 minutes.
  6. Cool for 10 minutes in pan before removing to wire rack to cool completely.
  7. For frosting, melt chocolate and cream over low heat on stove top.  Let cool and add enough powdered sugar to thicken.
  8. Frost cupcakes.  Top with additional coconuts, walnuts, and chocolate chips, if desired.
