Strawberry Torte

It tastes even better then it looks, if you can believe that.


Ingredients


  • 1 lb frozen strawberries, thawed
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1 lb of lady fingers
  • 2 packages (8 oz each) cream cheese
  • 3/4 cup sugar
  • 2 tsp vanilla
  • 1 pint heavy whipping cream
  • 1 kiwi
  • Fudge frosting

Directions


  1. Place thawed strawberries in saucepan.  Add sugar and cornstarch.  Cook over low heat until it turns into a thick sauce.  Remove from heat and let cool.
  2. Whip the cream cheese, sugar, and vanilla together.
  3. In separate bowl, whip the cream until stiff peaks form.  Fold into the cream cheese mixture.
  4. Arrange lady fingers vertically in a 9-inch springform pan.  This was by far the toughest part, so once you get past this it's clear sailing.  Try to keep them straight -- if they end up diagonal then it'll make it difficult to serve at the end.
  5. Line lady fingers in the bottom of the pan.
  6. Pour 1/2 of cream cheese filling onto lady fingers.  Arrange a layer of lady fingers in the middle.  If desired, you can put a layer of strawberries on top of the lady fingers.
  7. Pour remaining cream cheese mixture on top of lady fingers.
  8. Spread a layer of strawberry sauce over top of cream cheese.
  9. Peel and slice the kiwi.  Arrange over top.
  10. Decorate with fudge frosting.
  11. Serve with extra strawberry sauce.
