Make Ahead Campfire Beans

Yield: 3 servings

Ingredients

  • 1/2 onion, diced
  • 1 can (15 oz.) great northern beans, drained and rinsed
  • 2 roma tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tbsp molasses
  • 1 tbsp salt
  • 1/2 tsp pepper
  • 1/4 tsp liquid smoke
  • 2 tsp red wine vinegar
  • 2 tsp Worcestershire sauce

Directions

  1. In a skillet, sauté the onion in a bit of oil until tender.  Add the beans, tomatoes, garlic, molasses, salt, and pepper.  Cook for about 10 minutes.
  2. Remove from the heat and add the liquid smoke, vinegar, and Worcestershire sauce.
  3. Transfer the beans to a 1.5 quart disposable, greased aluminum foil container.  Cover with foil and refrigerate until ready to cook.
  4. To cook, place over a campfire until the beans are warmed through, about 10-15 minutes.
  5. Serve hot.
