Sweet Potato and Apple Casserole

Yield: 12 servings

Ingredients

  • Sweet potatoes
    • 3 lbs. sweet potatoes, 1" dice
    • 4 tbsp coconut oil, melted
    • Salt, to taste
    • Pepper, to taste
  • Topping
    • 5 tbsp butter, melted
    • 2/3 cup brown sugar
    • 1/2 cup flour
    • 1 tsp cinnamon
    • 1/4 tsp salt
  • Apples
    • 3 large apples, 1" dice
    • 1 tsp cinnamon
    • 1 tbsp coconut oil, melted

Directions

  1. Place the sweet potatoes on a baking sheet that's been lined with aluminum foil.  Drizzle the coconut oil over the sweet potatoes, and then sprinkle with salt and pepper.   Bake at 400°F for 25-30 minutes.  The potatoes should reach ~75% done.
  2. For the topping, combine all the ingredients in a mixing bowl and toss with a fork.  You aren't aiming for a fully homogenous mixture, just tossed together.
    • If it's too wet, you can add a bit more flour.
  3. Transfer the sweet potatoes to a 9x13 casserole dish.  Add the apples on top, and then sprinkle with cinnamon and drizzle with the coconut oil.  Spread the topping over the casserole.
  4. Bake at 375°F for 30 minutes, until the apples are tender and the topping is golden brown.
  5. Serve hot.
