BBQ Pork Skewers

Yield: 2 servings

Ingredients

  • Marinade
    • 2/3 cup cola
    • 1/2 cup brown sugar
    • 1/2 cup onion petite diced
    • 1/2 cup soy sauce
    • 1/2 cup ketchup
    • 1/2 cup cider vinegar
    • 6 cloves garlic, minced
    • 4 tsp lemon juice
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 1/2 tsp red pepper flakes
    • 1 tsp Sriracha
  • 2 large, boneless pork ribs (~ 1 lb), cubed
  • BBQ skewers

Directions

  1. To make the marinade, combine all ingredients in a large bowl and mix together.
  2. Place the cubed pork into an airtight container or zip top bag.  Add 3/4 of the marinade.  Toss to coat.  Refrigerate for at least 4 hours, but longer if possible.  Store the remaining 1/4 of the marinade in an airtight container.
  3. When ready to cook, transfer the pork onto the skewers.  Place over the campfire or grill to cook, basting periodically with the reserved marinade.
  4. Remove from the grill and serve hot.
