Cast Iron Skillet Brownie

Yield: 10 servings

Ingredients

  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1/3 cup + 1 tbsp cocoa powder
  • 1/2 tsp salt
  • 12 tbsp butter, melted
  • 2 1/4 tsp vanilla
  • 5 eggs
  • 1 1/2 cups flour
  • 1 1/2 + 1/3 cups chocolate chips, divided
  • 2 tbsp butter

Directions

  1. In a mixing bowl, combine the sugar, brown sugar, cocoa powder, and salt.
  2. Mix in the melted butter, vanilla, and eggs.  Mix well.
  3. Add the flour and 1 1/2 cups chocolate chips, mixing just until combined.
  4. Pour the batter to a 12" cast iron skillet that has been heated and greased with 2 tbsp additional butter.  Sprinkle remaining 1/3 cup chocolate chips on top.
  5. Bake at 350°F for 30-34 minutes, until the center is just barely set.
  6. Remove from the oven, and let cool on a wire rack for 5 minutes.
  7. Serve immediately with a side of ice cream.
