Rotisserie Chicken

Yield: 4 servings

Ingredients

  • Whole chicken
  • Olive oil
  • Dry rub
  • BBQ sauce

Directions

  1. Cut the tips off the chicken wings.  Truss the chicken with butcher's twine.
  2. Put the chicken on the rotisserie spit according to your grill manufacturer's instructions.
  3. Over a large bowl, drizzle some olive oil onto the chicken.  Spread it around with your hand to make sure the chicken is well coated.
  4. Liberally sprinkle your dry rub over the chicken.
  5. Transfer the spit to your grill.  Place a drip pan below the chicken.  Cook between 350-375°F for about 20 minutes per pound.
    • Check the temperature with a meat thermometer at the end to make sure it's completely cooked.
    • Brush with BBQ every 30 minutes.
  6. Remove the chicken from the rotisserie, cover with aluminum foil, and let rest for 10 minutes.
  7. Carve and serve immediately.
