Korean Army Stew (Budae Jjigae)

Yield: 5 servings

Ingredients

  • Pork marinade
    • 2 tsp soy sauce
    • 1 tsp mirin
    • 1/2 tsp sugar
  • 5 oz. pork, sliced
  • 3 hot dogs
  • 1 can spam, sliced
  • 1 onion, thinly sliced
  • Sauce
    • 2 tbsp Korean chili flakes
    • 2 tbsp rice wine
    • 1 tbsp soy sauce
    • 1 tbsp minced garlic
    • 1/2 tbsp sugar
    • 1/2 tbsp Korean chili paste (gochujang)
    • 1/4 tsp black pepper
    • 4 cups chicken stock
  • 2 cups rice cakes
  • 4 oz extra firm tofu
  • 2 slices Kraft singles
  • 1 package ramen noodles
  • Optional ingredients
    • 200g Enoki mushrooms
    • 4 green onions, sliced
    • 1/2 cup kimchi

Directions

  1. Mix the marinade ingredients and add the pork.  Let marinade in the fridge for 1 hour.
  2. Discard the marinade.
  3. In a large pot, combine the pork, hot dogs, spam, onion, and sauce ingredients.  Cover and bring to a boil.  Boil for 8 minutes.
  4. Add the remaining ingredients.  Boil uncovered for 2-3 minutes.
  5. Serve immediately.
