Baked Apple Pancake

Yield: 4 servings


  • 1 cup flour
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 cup milk
  • 4 eggs
  • 1/4 cup oil
  • 4-5 apples, peeled and cut into bite-sized pieces
  • 2 tsp lemon juice
  • 1 tsp cinnamon
  • Maple syrup.


  1. To make the batter, combine the flour, sugar, and salt.  Add the milk, eggs, and oil.  Set aside.
  2. In an oven-safe skillet, heat a small amount of oil.  Add the apples, lemon juice, and cinnamon and saute over medium heat until the apples are tender and lightly browned.
  3. Pour the batter over the apples.  Transfer to the oven and bake at 500°F for 8-10 minutes.  The edges should be very lightly browned.
  4. Remove from the oven.  Cut and serve immediately with maple syrup.
