Rhubarb Crisp

Yield: 8 servings

Ingredients

  • Fruit
    • 3/4 cup sugar
    • 3 tbsp cornstarch
    • 2 1/2 cups sliced rhubarb
    • 1/2 cup sliced strawberries
    • 2 cups sliced peeled apples
  • Topping
    • 2 cups quick cooking oats
    • 1 cup packed brown sugar
    • 1 cup butter, melted
    • 2/3 cup flour
    • 2 tsp ground cinnamon
  • Whipped cream

Directions

  1. In a large bowl, combine the sugar and cornstarch.  Add the fruit and toss to coat.  Transfer to an 8" square baking dish.
  2. In a separate bowl, combine all the topping ingredients.  Sprinkle over the fruit.
  3. Bake at 350°F for 45 minutes.
  4. Let partially cool before serving.
  5. Serve with whipped cream.
