Seasoned Potatoes

If you're looking for a way to spice up the scene and avoid the same boring, plain potatoes, then try these seasoned potatoes.  They've got a lot of flavor and look fantastic.

Yield: 4 servings


  • 1 lb red potatoes, cubed into bite-sized pieces
  • 1 cup arugula
  • 1 tbsp dried basil
  • 2 tbsp feta cheese
  • 2 tbsp chicken stock
  • 1 tbsp oil
  • 1 tbsp lemon juice
  • 3/8 tsp salt
  • 1/4 tsp pepper


  1. Place the potatoes in a large pot and cover with water.  Bring to a boil and boil for 9-11 minutes, until tender.
  2. Place all remaining ingredients in a food processor.  Pulse until the arugula is cut into small pieces and all ingredients are well mixed.  Transfer to a mixing bowl.
  3. Add the potatoes to the bowl and toss to coat.  Serve warm.
