Crunchy Italian Chicken Breasts

Simple, easy, and tasty.  You can make these chicken breasts pretty easily and they pair up with just about any side dish to make a great meal.

Yield: 6 servings


  • 2/3 cup italian bread crumbs
  • 1 cup grated romano cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 4 garlic cloves, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup flour
  • 3 eggs, beaten
  • 3 full chicken breast, cut width-wise to make six half breasts
  • Cooking spray


  1. In a bowl, combine the crumbs, cheese, and spices.
  2. In a second bowl, place the flour.
  3. In a third bowl, place the egg.
  4. Line a baking sheet with aluminum foil and spray with cooking spray.  With each chicken breast half, dredge in the flour, then the egg, then the spice mixture.  Lay the breasts on the baking sheet and lightly spray the tops with cooking spray.
  5. Bake at 375°F for 30 minutes.  Serve hot.
