Ricotta Mashed Potatoes

These rich mashed potatoes are full of cheesey goodness and will be a welcome addition to any meal.

Yield: 4 servings


  • 2 lbs. potatoes
  • 2 tsp salt
  • 15 oz. ricotta
  • 1/2 cup whole milk
  • 3 tbsp butter
  • 1/2 tsp black pepper


  1. Peel potatoes and cut into large pieces.  Boil in water until tender (about 20 minutes).  Strain off excess water.
  2. Combine cooked potatoes with all remaining ingredients.  Mash together.  Scoop into four 10 oz. ramekins.
  3. Set the oven to broil.  Place in the oven and broil until browned (3-5 minutes).  Serve hot.
