Thai Fries

These are a tasty twist on traditional french fries.  They are not as crispy as normal fries (because they aren't deep fried), but they have much more flavor.

Yield: 5 servings

Ingredients



  • 6 medium potatoes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 clove garlic, minced
  • 1 tsp crush red pepper
  • 1 tsp ground corainder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 2 tbsp sweet chili paste
  • 2 tbsp peanut butter
  • 2 tbsp oil
  • Zest and juice of one lime

Directions


  1. Cut the potatoes into long french-fry wedges.  Set aside.
  2. Combine all the remaining ingredients and mix well.  Place into a large ziploc bag and add the potatoes.  Shake to coat well.  Let marinate in the refrigerator for at least an hour.
  3. Line two baking sheets with aluminum foil and brush with vegetable oil.  Lay the potatoes out on the aluminum foil, preventing overlaps as much as possible.
  4. Bake at 400ºF for 45 minutes.  Serve immediately.
