Chocolate Chip Banana Bread

I brought two loaves of this bread into work and they were gone in under 30 minutes.  So someone thinks it tastes good...

Yield: 2 loaves + 12 muffins

  • 2 1/2 cups sugar
  • 1 cup butter, softened
  • 4 eggs
  • 7 bananas
  • 1 cup buttermilk
  • 2 tsp vanilla
  • 5 cups flour
  • 2 tsp baking soda
  • 2 tsp salt
  • 1 bag (12 oz) mini chocolate chips

  1. Cream sugar and butter.  Add eggs and mix well.
  2. Add bananas and mash.  Add buttermilk and vanilla and mix well.
  3. Add in flour, baking soda, and salt.  Mix by hand.
    • It's important to not overmix.  Overmixing will cause the muffins to not rise properly.  Mix just long enough to get the dry ingredients moistened.
  4. Add in mini chocolate chips and stir just until mixed.
  5. Put paper liners in muffin pan and fill 3/4 full.
  6. Grease bottoms only of 2 bread pans.  Divide batter evenly between each.
  7. For loaves: Bake at 350ºF for 65-75 minutes, until toothpick comes out clean.
  8. For muffins: Bake at 400ºF for 20-25 minutes, until toothpick comes out clean.
