Cookies and Cream Cake

The secret to this cake is that the frosting is made to match the stuffing in Oreos, making you feel like you're eating massive sandwich cookie.  If you like Oreos then you'll love this!


Ingredients


  • Cake
    • 1 package (18 1/4 oz) white cake mix
    • 1 1/4 cups water
    • 1/3 cup oil
    • 3 egg whites
    • 1 cup coarsely chopped Oreo cookies (The easiest way to do this is to put them in a large Ziploc bag and then smash them a few times with a rolling pin)
  • Frosting
    • 8 cups confectioner's sugar
    • 1 cup shortening
    • 1/2 cup milk
    • 2 tbsp vanilla
    • Extra cookies for decoration

Directions


  1. Combine cake mix, water, oil, and egg whites.  Mix well.  Fold in chopped cookies.
  2. Pour into two greased & floured 8-inch round baking pans.
  3. Bake at 350ºF for 25 - 30 minutes.  Cool on wire rack.
  4. Don't level the cakes!  The frosting is super thick and if you level it then you'll have one hell of a time trying to spread the frosting between the layers.
  5. Mix all frosting ingredients except the extra cookies.  Spread between layers, over top, and around the side.
  6. Decorate with cookie halves on top and crushed cookies on the side.
