Mexican Rice

Yield: 8 - 10 cups rice

Ingredients

  • 2 cups rice
  • 1/4 cup oil
  • 4 cups hot water
  • 1 tsp salt
  • 1/2 tsp cumin
  • 4 cloves minced garlic
  • 2 tbsp chicken soup base
  • 1 can (8 oz) tomato sauce

Directions

  1. Heat the oil in a large frying pan over medium heat.  Add the rice and fry while stirring occasionally until it begins to brown.
  2. Reduce heat and add the remaining ingredients and mix.  Cover and let simmer for 30-40 minutes until all of the liquid is absorbed.
  3. Serve hot.
