Baked Feta with Tomatoes

Yield: 8 servings

Ingredients

  • 1 cup cherry tomatoes, cut in half
  • 1 clove garlic, minced
  • 1/4 cup thinly sliced red onions
  • 2 tbsp chopped parsley, divided
  • 1 tsp oregan
  • 1 tsp olive oil
  • 1/8 tsp black pepper
  • 10 oz. block feta
  • Crackers

Directions

  1. In a mixing bowl, combine the tomatoes, garlic, onion, 1 tbsp parsley, oregano, olive oil, and black pepper.
  2. Place the feta in an oven safe dish.  Sprinkle the tomato mixture over top.  Bake at 400°F for 15 minutes.
  3. Serve hot, using a knife to cut bits of hot feta onto crackers.
