Garlic Sauce Chicken

If you're looking for a tasty chicken dish to enjoy on a cold night, look no further.  A hearty serving of this will fill you right up.

The garlic sauce is relatively mild.  If you really like strong garlic flavor then you should add a few extra cloves.


Ingredients


  • Sauce
    • 4-6 garlic cloves
    • 1 tbsp olive oil
    • 6 tbsp butter
    • 6 tbsp flour
    • 3 cups milk
    • 2 cups grated parmesan cheese
    • 1/8 tsp nutmeg
    • 1/2 tsp salt
    • 1/4 tsp pepper
  • Chicken
    • 9 oz. spinach
    • 1/4 tsp salt
    • 1/4 tsp pepper
    • 5-6 chicken breasts
    • 1 tbsp olive oil
  • 1/2 cup grated parmesan, plus additional if desired
  • Cooked bowtie pasta
  • Chopped tomato

Directions


  1. Place garlic in a piece of aluminum foil with 1 tbsp oil.  Bake in the oven at 425°F for 30 minutes.  Cool for 10 minutes.
  2. In medium saucepan, melt the butter.  Add the flour and whisk until smooth.  Gradually add the milk and simmer until thickened.
  3. Place the roasted garlic and butter mixture into a blender.  Add the parmesan, nutmeg, salt,and pepper.  Puree.
  4. Place the spinach in a greased 9x13 casserole dish.  Sprinkle with salt and pepper.
  5. In a large skillet, brown the chicken breasts in the oil on both sides.  Place on top of the spinach.
  6. Pour the sauce from step #3 on top of the chicken, being certain to cover all the chicken breasts.
  7. Cover and bake at 425°F for 30 minutes.  Check temperature with a meat thermometer to ensure it's above 160ºF.
  8. Remove cover and sprinkle with 1/2 cup parmesan.  Return to oven for 5 minutes.
  9. Let stand for five minutes.  Serve over hot pasta.  Sprinkle with additional parmesan if desired and top with chopped tomato.
