I had some leftover blue cheese in the fridge and needed to find a use for it.  I started wondering if there was a way to combine it with potatoes.  Turns out there is, and it tastes way better than traditional mashed potatoes.

This is a classic pizza.  But when I make it at home I put on more cheese then you'd get at a pizzeria.  Plus, I give the sauce a bit of a spicey kick that makes it taste much better.

Swiss Mushroom Chicken

This is an easy dinner that combines a lot of great flavors together.  The cheese melts the mushrooms in place on the chicken breasts.  It comes out looking like you worked all afternoon, but can be tossed together pretty quickly.
