Korean Meatballs

Yield: 6 servings

Ingredients

  • Meatballs
    • 1 1/2 lb. ground beef
    • 4 green onions, chopped
    • 1/2 cup panko breadcrumbs
    • 3 cloves garlic, minced
    • 1 egg
    • 2 tbsp Sriracha sauce
    • 1 tsp grated ginger
    • 1 tsp salt
    • 1/2 tsp pepper
  • Glaze
    • 1/2 cup apricot jam
    • 1 tbsp soy sauce
    • 2 tbsp Sriracha sauce
  • Finely chopped green onions for garnish

Directions

  1. Mix all the meatball ingredients together in a large bowl.  I find it easiest to just use your hands.
  2. Form the meatballs into 1" balls and place on a baking sheet lined with parchment paper.
  3. Bake at 400°F for 20-25 minutes.
  4. For the glaze, whisk together all ingredients in a bowl.  When the meatballs are done cooking, add them to the glaze and toss to coat.
  5. Serve the meatballs garnished with the finely chopped green onions.
