Cranberry Thyme Gin and Tonic

Yield: 4 servings

Ingredients

  • 1 1/2 cups cranberries
  • 1/2 cup white sugar
  • 1 cup water
  • 2 tbsp orange juice
  • 1/2 tsp vanilla
  • Fresh thyme
  • Gin
  • Tonic

Directions

  1. In a saucepan, combine the cranberries, sugar, water, and orange juice.  Bring to a simmer and cook until the cranberries pop, just like making cranberry sauce.  Add the thyme and let simmer for another 10 minutes to let the flavors mix.
  2. Pour the sauce through a fine mesh strainer into a clean bowl.  Using the back of a spoon, press the puree through until all the liquid is collected and only solids remain.  Discard the solids.
    • If desired, you can can the syrup in a clean Mason jar.
  3. Refrigerate the syrup until ready to use.
  4. To assemble the cocktail, combine:
    • 1 oz. syrup
    • 2 oz. gin
    • 2 oz. tonic
